Chicken, Ginger, Celery, Scallion Soup
Sunday, July 16th, 2006This simple dish is great as a soup (with chicken cut up) or as a chicken dish (with larger pieces of chicken).
The ingredients include:
- Skinned Chicken - 2 1/2 pounds
- Celery - 3 long stalks
- Scallion - 1 bunch
- Fresh Ginger - 3 inch piece, cut onto slivers
- Fresh Lemon Juice - 2 teasopoons
- Fresh Parsley or Celantro - 1 bunch
- Sea Salt - to taste
- Place the Chicken in a pot with enough water to cover it.
- Cover the pot and bring to a boil over medium-high heat.
- Add Celery, Scallion and Ginger.
- Cover, reduce heat and simmer for one and a half hours.
- Remove the Chicken, allow it to cool, then pull the meat from the bones.
- Return the Chicken to the pot.
- Add Salt, Lemon Juice and Parsley or Celantro.
