Chicken, Ginger, Celery, Scallion Soup

This simple dish is great as a soup (with chicken cut up) or as a chicken dish (with larger pieces of chicken).

The ingredients include:

  1. Skinned Chicken - 2 1/2 pounds
  2. Celery - 3 long stalks
  3. Scallion - 1 bunch
  4. Fresh Ginger - 3 inch piece, cut onto slivers
  5. Fresh Lemon Juice - 2 teasopoons
  6. Fresh Parsley or Celantro - 1 bunch
  7. Sea Salt - to taste
  • Place the Chicken in a pot with enough water to cover it.
  • Cover the pot and bring to a boil over medium-high heat.
  • Add Celery, Scallion and Ginger.
  • Cover, reduce heat and simmer for one and a half hours.
  • Remove the Chicken, allow it to cool, then pull the meat from the bones.
  • Return the Chicken to the pot.
  • Add Salt, Lemon Juice and Parsley or Celantro.

Easy Vegetable Soup with Daikon Radish, Leek, Parsley and Carrot

This is an easy to fix and very delicious soup that you and your family will love.

The ingredients include:

  1. 5 cups of water
  2. 1 cup each: daikon radishes, leeks, parsley, and carrots

Bring 5 cups of water to a boil. Add chopped vegetables. Cover and simmer for 20 minutes.

OPTION: Garnish with parsley and chopped scallions.

To make a pureed soup, process cooked soup in a blender for a few seconds.
